The pastry cream for vanilla slices


  • 2 cups unsalted margarine (360 g)
  • 6 eggs
  • 1/2 cup milk (125 ml)
  • 1 tablespoon pisco (15 ml)
  • Two rectangular sheets of phyllo dough (300 g)
  • 1 tablespoon vanilla extract (15 ml)
  • 6 tablespoons sugar (90 g)
  • 3 tablespoons powdered sugar (45 g)
  • 3 tablespoons cornstarch (45 g)


  1. The first thing you need to do is make your pastry cream. To do this, mix the cornstarch with a splash of milk. Then set it aside.
  2. Then whisk eggs and margarine together with sugar. You will notice it will start to get a frothy texture. Then set this mixture aside.
  3. Now mix the rest of the milk with the pisco and vanilla extract and heat it until it reaches its boiling point.
  4. Then turn off the heat and stir in the eggs, margarine and sugar mixture.
  5. Then boil the whole mixture over low heat and finally add the cornstarch and the milk.
  6. Continue stirring until the mixture has thickened. It should be smooth and free of lumps.
